Grilled Zucchini Salsa Recipe from Simply for Life


Our friends at Simply for Life have been happy to share with us some great recipes that can be made with local ingredients. Check out this great one for zucchini:

Grilled Zucchini Salsa

2 garlic cloves, minced
1 Tbsp of olive oil
Pinch of salt and pepper
3 medium zucchini with peel halved lengthwise
½ cup diced tomato
2 tbsp finely chopped onion
1 tbsp finely chopped fresh parsley
2 tbsp chopped fresh chives
1 Tbsp balsamic vinegar
1 tsp olive oil
Lemon juice to taste

Combine garlic, 1 Tbsp olive oil, salt and pepper in a small bowl. Brush on cut sides of
zucchini. Preheat BBQ on medium. Cook zucchini cut side down on grill for 3 minutes
dabbing remaining olive oil mixture over outside of zucchini, until dark grill marks appear
but zucchini is still firm. Turn and cook for 2 to 3 minutes until zucchini is tender crisp.
Dice into ¼ inch pieces. Place in medium bowl and add the tomatoes, onion, parsley,
and chives and mix well. Add vinegar, 1 tsp olive oil and lemon juice. Toss until coated.
Refrigerate for about one hour stirring several times to blend flavors.
