Simply for Life have been happy to share with us some great recipes that can be made with local ingredients. Check out this great one for zucchini:
Grilled Zucchini Salsa
2 garlic cloves, minced
1 Tbsp of olive oil
Pinch of salt and pepper
3 medium zucchini with peel halved lengthwise
½ cup diced tomato
2 tbsp finely chopped onion
1 tbsp finely chopped fresh parsley
2 tbsp chopped fresh chives
1 Tbsp balsamic vinegar
1 tsp olive oil
Lemon juice to taste
Combine garlic, 1 Tbsp olive oil, salt and pepper in a small bowl. Brush on cut sides of
zucchini. Preheat BBQ on medium. Cook zucchini cut side down on grill for 3 minutes
dabbing remaining olive oil mixture over outside of zucchini, until dark grill marks appear
but zucchini is still firm. Turn and cook for 2 to 3 minutes until zucchini is tender crisp.
Dice into ¼ inch pieces. Place in medium bowl and add the tomatoes, onion, parsley,
and chives and mix well. Add vinegar, 1 tsp olive oil and lemon juice. Toss until coated.
Refrigerate for about one hour stirring several times to blend flavors.
