New Brunswick-made sauerkraut delicious alongside roast chicken and braised vegetables

My husband loves sauerkraut and just the thought of it brings back happy childhood memories in Germany. But the only memory I could conjure about sauerkraut was the smell of boiled hotdogs and sausages sold by street vendors in Freeport, Maine. I'm not much for hotdogs and sausages so the sauerkraut was guilty by association. An unfair rap I acknowledged when I discovered the health benefits of this fermented cabbage. Now I can't get enough of it served alongside roasted chicken and braised vegetables. My husband I will go through an entire one pound bag at supper.

I discovered this NB-made brand at Dean's Meats in the Saint John City Market. Warmed along with vegetables, it retains an irresistible crunch and a lovely salty sweetness. If you're worried about the salt just soak it in cold water for a few mimnutes then drain before warming. Visit Lewis Mountain for more information about the health benefits of their products.
